Banding

Visible steps in what should be a smooth gradient.

Also called color banding, posterization

Banding happens when a gradient has too few color steps, so you see stripes instead of a smooth blend. It is common in skies and in heavily compressed images.

Dithering, adding a little noise, or working at a higher bit depth helps hide it.
